This soup is so fabulous at supporting our immune system to deal with cold and flu viruses! It is so easy to make and makes such a difference!
1 Red Onion, 2 Green Chillies, 4 Cloves of Garlic, 5cm Piece of Ginger, 1 Small Butternut Squash, 1 Punnet of Shitake Mushrooms, Vegetable or Chicken Stock
Saute the finely chopped onion, chillies, garlic and ginger in a little olive oil and a pinch of salt until the onion softens.
Dice the butternut squash (get rid of the seeds) Slice the shitake mushrooms and add both of them to the onion, chillies, garlic and ginger mix. Stir well then add enough stock to cover the vegetables.
Simmer well, until the squash is soft.
Put soup into a blender and blend it into the most amazing orange, spicy soup!
